Cauliflower Risotto

Description: Lower carb risotto

Ingredients:
 g Cauliflower, raw
 g Mushrooms, white, raw
 g Ham, Tesco, British (HCP added*)
 g Onions, raw
 ml Fresh double cream tesco (HCP added*)
 g Oil, olive
 g Cheese, Parmesan, fresh
 g Mixed herbs, dried

Directions:


1. Grate the cauliflower to form a 'rice' texture, and set aside.
2. Chop the onion and fry in half of the olive oil, in a large frying pan.
3. Chop the onions and add to the onions, and cook for a few minutes.
4. Chop the ham and add to the pan with the cauliflower, herbs and remaining oil.
5. Stir fry for a few minutes until the cauliflower starts to cook.
6.  Add in the cream and stir until heated through.
7. Add in the grated parmesan and then serve.
